
I used to avoid baked potatoes because I was looking to cut calories and potatoes are a starchy carbohydrate.
And then I started making baked potato canoes.đđŒ
Poke a russet potato with a fork, rub the skin with a little olive oil and top with a sprinkle of sea salt.
Wrap potato in foil and bake at 450° for 60-70 minutes (you want the potato to be a little firm).
Slice potato in half, length-wise, then use an ice scream scoop to scoop out most of the middle of the potato.
Top with a dollop of light sour cream and a sprinkle of sharp cheddar cheese. Use the inside of the potato to make mashed potatoes for your kids.đ€
Voila. Now you can enjoy baked potatoes without all of the extra carbs.
