Baked Potato Canoes



I used to avoid baked potatoes because I was looking to cut calories and potatoes are a starchy carbohydrate.


And then I started making baked potato canoes.๐Ÿ‘‡๐Ÿผ


Poke a russet potato with a fork, rub the skin with a little olive oil and top with a sprinkle of sea salt.


Wrap potato in foil and bake at 450ยฐ for 60-70 minutes (you want the potato to be a little firm).


Slice potato in half, length-wise, then use an ice scream scoop to scoop out most of the middle of the potato.


Top with a dollop of light sour cream and a sprinkle of sharp cheddar cheese. Use the inside of the potato to make mashed potatoes for your kids.๐Ÿค—


Voila. Now you can enjoy baked potatoes without all of the extra carbs.


Remember the canoe when you order a baked potato at a restaurant!


You donโ€™t have to feel deprived.


Itโ€™s just balance.
