When my husband was training to get ready for an NFL season, he would always request “protein and 2 vegetables” for dinner.
I‘ve perfected the seasoning and today, salmon with roasted broccoli and brussels sprouts has become a staple at our dinner table.
If you‘ve always assumed that eating clean takes a lot of effort, know that you can make this salmon and veggie dinner in the same amount of time it would take you to heat up a prepared, processed meal.
Preheat oven to 350 degrees.
Drizzle atlantic salmon filets with olive oil then sprinkle with garlic powder, sea salt and black pepper. Bake for 30 minutes then place under the broiler for 2 minutes for a charred, carmelized finish.
Slice Brussels sprouts and broccoli crowns in half, length-wise. Place on a baking sheet and drizzle with a little olive oil, sea salt and pepper. Bake for 30 minutes at 350 degrees then drizzle with balsamic glaze and place under the broiler for 1-2 minutes for the same charred, caramelized finish.
SO clean. SO delicious.
