It's fall, y'all! Chili season.
This delicious, hearty dish doesn't have to be avoided just because you're watching your waistline. I've been working on this recipe for years and since I'm not planning to enter a chili cook-off any time soon, here it is:
Set crockpot to low heat.
Brown 2 lbs of lean ground turkey breast with olive oil and add to crockpot.
Add the following to crockpot:
1 green pepper (chopped)
1 medium onion (chopped)
2 cans dark or light kidney beans (not drained)
2 cans Rotel diced tomatoes (not drained)
2 tbsp diced jalapenos
2 packages of McCormick reduced-sodium Chili mix
3 tbsp minced garlic
1 tbsp chili powder
juice of one lime
Simmer on low heat for at least 4 hours, stirring occasionally.
Top with light sour cream, shredded sharp cheddar cheese, multigrain tortilla chips and your favorite hot sauce.
